You know how best to achieve this is to be on your own for a little while. You're someone that works best when you organise things. When you're organised, you're accurate and your attention to detail is amazing. You have to have a method that feels that everything is working like clockwork otherwise it sends feelings of fear, panic and chaos. To re-establish any control over chaos whether internal or external you really need to just take some time alone with your thoughts. A short break is excellent but even half an hour on your own, somewhere where you cannot be interrupted and you're allowed to just think things through will help you re-establish the control you need in order for you to make this project work.
